Instant Vegetable Kuruma includes Carrot(100gm), Beans(50gm), Potato(100gm), Grated Coconut(100gm), Onion(100gm), Ginger, Garlic, Chilly, Curry Leaves(50gm) RECIPE=Firstly, in a large kadai heat 4 tsp oil and saute 1 bay leaf, 1 inch cinnamon, 2 pods cardamom and 3 cloves.Add 1 onion and saute well.Further, add 1 tomato and saute until soft and mushy.Now add carrot,cauliflower, peas,potato,beans and 1 tsp salt. Saute for 2 minutes or until vegetables are stir-fried. Also, add 2 cup water and stir well. Cover and boil for 10 minutes or until vegetables are almost cooked. Prepare the masala paste by taking 1 cup coconut in a blender.Also, add 8 cashews, 1 inch ginger, 1 clove garlic, 2 chilli, 2 tbsp poppy seeds, 1 tsp coriander seeds, ½ tsp fennel and handful coriander.Blend to smooth paste adding ¼ cup water.Add in prepared masala paste to the cooked vegetables and stir fry for 2 minutes.Now add 1½ cup water and stir well.Ccover and cook for 10 minutes or until vegetables are cooked completely.
