Instant Mutton Varattiyath includes  Mutton(500gm), Onion(150gm), Ginger ,Garlic ,Chilly ,Tomato, Curry Leaves ,(100gm)     RECIPE = To begin making the Mutton Varattiyathu, thoroughly wash and clean the mutton pieces. To marinate the mutton, in a mixing bowl combine sliced onions and tomatoes,  ginger garlic paste, chilli powder, turmeric powder, salt to taste and a few curry leaves along with the mutton. Mix well and allow the mutton to marinate for 30 minutes. In a pressure cooker, add in the marinated mutton pieces along with the marinade and pressure cook for 4 whistles. Turn off the flame and allow the pressure to release naturally. In a heavy bottomed pan heat oil on medium flame, add curry leaves, allow them to crackle and then add dried red chillies. Next add the sliced onions and saute for a couple of minutes. Once they have slightly softened,  add in cumin powder and fenugreek seed, black pepper powder, garam masala powder, salt and give it a good stir. At this stage add in the cooked mutton to it and mix well with the masala. Add quarter cup of water and allow thee mutton to come to a rolling boil. Garnish it with curry leaves and Mutton Roast is ready to be served.
