Pumpkin (mathanga) in a 500 g pack. Sweet, orange-fleshed mathanga is a Kerala classic, best known in mathanga erissery with red cowpea (van payar) and roasted coconut, and in olan with ash gourd and coconut milk at Sadya.

It also works in sambar, pumpkin thoran, kootu curry, and in soups and halwa.

Wrap cut pumpkin in cling film or keep it in a closed box in the fridge and use within three to four days. Scoop out the seeds and fibre before storing.
