Fresh Coconut (nalikeram), a 1 kg pack. Whole coconut is the heart of Kerala cooking: grate it for thoran, aviyal, chammanthi and puttu, grind it for fish curry and theeyal, or squeeze it for thick and thin coconut milk for stew, appam, olan and payasam.

To break a coconut, tap firmly around the middle with the back of a heavy knife, turning as you go, and collect the coconut water.

Whole coconuts keep for several days at room temperature. Once opened, refrigerate the halves covered and use within a day or two.
